Do I have to sign up for activities in advance? If I wanted to do the zip line can I just go to the zip line booth and sign up there? Also for the roller coaster can I just walk up, pay and ride?

You can walk up and pay for both of those activities. I don't know about the roller coaster, but you may find that the zip line has a few hours wait.
