I purchased the internet package for my upcoming cruise on Indy. How will that work with my iPhone so that I can receive text messages only and not get charged from my carrier (T-Mobile)

You would have to use an internet based texting app, such as iMessage or WhatsApp.

Normal text messages (sms) require cellular service. IMessages will work fine over wifi. You should be able to send/receive sms texts if you have wifi calling. Put your phone in airplane mode, turn wifi on and login to wifi, if you do have wifi calling you should connect to your carrier and will then be able to send and receive sms texts.
