Freshly squeezed, previously frozen, and I'm sure pasteurized. Waiter said they were supposed to call it freshly squeezed, unless asked if it was previously frozen.

I did a day visit on Eclipse a couple of months ago and they were squeezing oranges in the bar near swimming pool. Smelt absolutely lovely. So I guess each ship is different and depending on where they get supplies from. This was Southampton and I know lots of fruit goes on all of the ships there as big fruit supply for local markets.
