Interesting. The WSET 1 is easy, even a relative novice can pass by paying attention in class, reading the materials, and taking good notes. The WSET 2 requires some studying unless a person is already pretty knowledgeable, and I don't know that I would want to take that amount of time out of my cruise, unless there were a lot of sea days.

To start with I imagine the whole cruise is sea days as they are on the Transatlantics. World cruises would be slightly different of course.
