I noticed a new thing in the Garden Cafe (vs the 1st cruise I was on) is that they show what they will be having that night. So you can decide if you want to eat "buffet style" or if you would prefer a sit down meal. The MDRs have similar menus, the Buffet will have a general theme for some (but obviously not all) of their items. This is completely wrong. There is a lot of overlap between the MDR menu and the buffet. They'll often have the same soups, and some of the same appetizers. When it's asian night on the buffet and they have egg rolls...surprise, surprise that one of the appetizer options in the MDR's is an egg roll. Same goes for some carving items. On the night they offer leg of lamb provencal (used to be rack of lamb, cheap NCL bastards), they'll be offering leg of lamb in the buffet. Many MDR desserts are the same as in the buffet, just dressed up a little bit more. There are many items that only appear in one location, but there is a substantial amount of overlap.
