On the embarkation ticket do both tickets say 'priority' or just the lead passenger?

What type of priority are you talking about? Suite, Captains Circle Status?

It will say it on any passenger that has that status or booked in a suite etc.

If you have priority boarding then whoever is in your cabin with you is entitled to priority boarding.

As colo cruiser said, everyone sharing a cabin gets priority boarding if at least one person in that cabin has priority boarding.

Both my boarding pass and my wife's boarding pass say ETicket Priority Boarding Pass. 

We are both at the Captain's Circle Elite membership level.

Are you saying that one of you is Elite and the other is not? If so, the passenger who is Elite will show priority on the boarding pass. The other passenger will not. If the two of you board together, the non priority passenger can board with the priority one in the priority line. However, if the two of you board separately, the non-priority passenger will not get moved up.
