Serenade BOGO Specialty Dining

This looks especially interesting since my mom and I wanted to try a couple of the specialty restaurants on board.  We currently have MTD.  I understand it's the first 2 nights of the cruise - not a problem.  My question is, will the restaurants be Chops & Giovanni's?  It would be great if it those as my mom doesn't eat sushi.  If we should get the "sushi" restaurant, can we change it to something else?   And if I book it, will we be missing the vidalia onion tart or escargot or something equally delicious that we shouldn't miss on the first 2 nights?  We are sailing in Sept to Canada/New England.

Yes, space permitting, you can change to another restaurant.
