How far in advance to book excursions Sydney and PEI

Hi there.  Sailing early Sept 2020 to Canada New England.  How far in advance would you book excursions ( intending to do so via our cruise line)   Wondering If we should book any prior to final payment.  In particular for PEI and Sydney.
