local island specialities

My husband and I love to try local specialities. We are cruising from San Juan PR  to St. Thomas, St. Maarten, St. Kitts, St. Lucia and Barbados during the beginning of April. What are the island specialities in regards to food & drinks? Are there some best of places we should try?

I'm not sure about the others, but San Juan is known for a dish called mofungo (sp?) that is made from mashed plantains.  I think San Juan is also the birthplace of the pina colada.
