Any of the a la carte restaurants you can make a reservation for pre-cruise without being charged. All of the restaurants for Encore’s latitude meals, Le Bistro, Cagney’s, Q and Los Lobos, are a la carte.

As has been stated, the platinum meals on Encore are all a la carte, so there is no charge when booking. However, I don't know for sure that you are on the Encore, and on other ships Moderno is an option which has a charge when booking.

 

You book the latitudes meals in the same way as you would book them if you were going to use your dining package or pay a la carte. Just make sure that you book any fixed price ones (Teppanyaki and Moderno if applicable) first, regardless of how you will be paying for them.
