Have you checked your cruise line's excursion offerings? In the past cruise lines have offered excursions for passengers with mobility limitations. Or rather than use the shared safari taxis, hire a private taxi and take an island tour in comfort with a stop at a beach with an easily accessible restaurant for lunch.
