Wonder OTS - Specialty Dining, MDR, Windjammer, Coastal Kitchen?

We'll be on the Wonder for a mediterranean cruise. Port intensive - with some late days.  We did the UDP the last time we sailed on Symphony but it was a lot of food and in no way would we want to do heavy meals at 8/8:30PM night after night.  We're also in a Junior Suite this time around so we'd like to give Coastal Kitchen a try, are we able to request reservations each night or just a few? We are debating a 3night Dining package, or doing chefs table and hibachi. Or maybe just sticking to CK and complimentary venues. Too many options ... We're also celebrating my birthday on the 3rd night which venue would you recommend?
