Any "must do" excursions to celebrate a 70 year old's birthday?

Good morning, thank you for any assistance. I have read through the forum but I am curious if anyone has any "once in a lifetime" type recommendations? 

 

We are traveling with my father and he is having his birthday on this day in Harvest Cay, Belize. He is mobility limited but I would like to do something really special for him if anyone has any suggestions? Not really concerned about the cost, just want him to have a blast with his kids and grandkids 🙂

Edit: I have the date wrong, it will actually be his birthday in the Costa Maya port, but any recommendations are still very welcome!

In Costa Maya, book an AI at Maya Chan and if they are closed or full, try Jaimie's Blue Reef.

I'm 72 and would gladly go to both of those.  I'd also been on a ruins tour with native Choice.  But,  I still have mobility.  Wouldn't necessarily recommend for your father.
