"Must do" excursions to celebrate a 70 year old's birthday?

Good morning, thank you for any assistance. I have read through the forum but I am curious if anyone has any "once in a lifetime" type recommendations? 

 

We are traveling with my father and he is having his birthday in this port. He is mobility limited but I would like to do something really special for him if anyone has any suggestions? Not really concerned about the cost, just want him to have a blast with his kids and grandkids 🙂

Depending on when you are traveling, Maya Chan may work, if they are open.
