You need to be at (if I remember correctly) the Purser's desk at 8 AM on the first sea day to register your interest. There's a cost - before COVID it was $125 but there are some keepsakes associated with the tour. Previously there was also a free tour of the main galley - basically just a walkthru open to all comers. Worth it if offered but not really worth multiple trips on multiple voyages.
