We have a boarding time of 10:30 on our documents, if we arrive later, like around noon, will we be able to just get in diamond

line or will we have to wait in a line for people who arrive later than their boarding window?

Yes, with Diamond you always can board "with the next group", no matter, when you arrive.

Opposite situation for me.  I have 3 pm boarding, but, am doing a side by side same port so I'll be there quite a bit earlier.  Wondering how strict they are?

That depends on the port and even more on the number of people boarding. On a cruise with multiple boarding ports the situation is very relaxed. If you go from Miami on a full ship you can expect to wait many hours if you arrive 11am instead of 3pm without YC, Aurea or Diamond.
