Whiskey drinkers, is this a pretty accurate list of what's available?

On Discovery last week, they had Woodford and Buffalo Trace for bourbon, and for rye they had the Jack Daniels Rye, some Irish rye expression, and maybe the John Jacob in a few bars.

The dirty secret of Princess bar offerings is that they get promotional money in variable amounts so brands get favoured or disfavoured based on the size of the checks.  Hence the extreme lack of Hendricks, Crown Royal and Makers of late.

On a few cruises I drank quite a bit of Talisker 10 - which fit in the limits of the Plus package. I didn't see it in the menus posted just above here but it was definitely available on Royal Princess in May. (I didn't check on Ruby in December.) It can really make a difference which bar you are at. Just because they have a QR Code menu doesn't mean that's actually all they have. If you want something that's not on the listed menu try looking behind the bar or asking the bartender. If you still don't find it check other bars.

I had plenty of Talisker last month on Regal.  Along with Glenlivet, Glenfiddich, Glenmorangie, Glenkinchie....   by the end of the cruise, the bartender was bringing different bottles of scotch up for me. 🙂

So, this has been my experience (15+ cruises, 10+ on Princess).  When you find 1-2 bars that you prefer (Crooners, Casino and fan tail) ask them for what you like.  If they don't have it at that bar, but it is on the ship, they will often be sure that it is at their bar for the rest of the cruise.  Slip the bartender a couple of bucks for the effort.  Has never been an issue in my experience. Lots of options.
