Considering bidding on a cabin upgrade for the first time.  One question… is the amount you bid and are charged if successful,  per person or per cabin.

Right on the bid invitation email, it quotes the price to bid for a category $ _____ pp

which is “per person”.

It is per person as others have noted but based on double occupancy.  So your bid will be doubled if you are sailing solo.
