For on-line booking direct, how do I select our dining option? Started a booking but couldn’t any dining options.

As you complete your booking, you should have the option.

If you're booking on HAL's website directly, your dining preferences are always requested as part of the process.

No you didn't miss it as it is not on the UK/Europe website.

Suggest you make a booking with a 'Courtesy Hold' and then phone the UK office on Monday morning to confirm your dining requirements with them.
