Does anyone know how to determine when the Terrace Grill will be having a theme night?

Ask the Terrace Manager. Each segment is planned in advance and he can tell you the current planned menus.

 

Some will do it, others won’t.

Thanks, I am trying to get an idea what will be available before booking any specialty restaurants

It is posted on the menus on the TV in your room on the day. That does not help with advance planning, but does allow one to change plans if a theme night is either desirable or undesirable.

During my September 2022 and June 2023 cruises the Terrace theme nights were the same on two consecutive nights; I don't know if this is always done. There was no notice that it would be two nights so the first night on my June cruise was incredibly busy (and we ate late-ish...after 8 pm).

On Regatta last March, "Chef's Market Dinner: Mexico" was in TG on 2 consecutive nights.  When we mentioned we had a specialty that night, all present assured us "Oh, they always run such for 2 nights!  Enjoy it tomorrow."
