The answer is: it depends (how's that for clarity).  When you change your original booking to whatever, Carnival adjusts your fare code that triggers the changes.  Maybe you get some OBC with the new fare, maybe you get a lower fare and the difference between what you have paid and your new fare is given as OBC (usually after the final payment is made), you could possibly have a new stateroom if your new fare is based on a guaranteed cabin category (say balcony guarantee) and you selected a cabin in your original booking.  Talk to someone at Carnival or your TA to check the options.
