Signing up for champagne dinner (Eclipse)

I know the champagne dinner isn’t always held onboard.  If you want to sign up can you go to any bar or only a particular bar or restaurant?

Find a sommelier. Bartenders don't have those lists usually.    BTW they are usually the ones in black pants maroon jacket, if your ship has a cellar masters that would be best place.
