ISO reminders for the online res for specialty restaurants

We have always eaten late and have generally found the opposite.   While it is true it is near the end of their shift they usually still have a lot of work, tearing down the tables and setting them up for the next meal. 

 

Generally we find the staff more relaxed and have more time to engage in conversation in lieu of of rushing to attend to all the tables.     Even though we normally don't arrive until 8:30 - 9:00 we generally are not the last out of the restaurant.    As the evening progresses it really becomes very peaceful.

 

I of course have not yet sailed Oceania but don't expect it to be much different from Ponant (even smaller)
