As many as you want. It won't let you choose 2 on the same night, but other than that you could potentially reserve for every night on board (if there is space).

For each ship on the Our Ships tab on Silversea.com, scroll down to Dining.

Seriously for OP: not all restaurants require a reservation. Reservations can often be made or changed on the ship.
