They seem to vary the menu from trip to trip. I don't know if these are ongoing changes, or a menu rotation. We've been in the specialty restaurants on M class each of our 5 cruises on Summit or Connie, and only saw Steak Diane on the menu one of those times.

I have been on Summit, Infinity and Constellation and find that you can ask for Steak Diane almost anytime. Even with the menu changes, you should be able to get it cooked for you at your table in the specialty resturants.

We just got off the Millennium and Steak Dianne was on the menu of the Olympic restaurant.

We had Steak Diane in the Olympic and it was
delicious:D, so yes they do serve it.
