We have cruised several times with NCL which has freestyle dining. We are now thinking of trying Celebrity Galaxy. Do you have the option of doing freestyle informal dining at night or do you have to have assigned seating and dress?

They do not have the freestyle dining you are used to as their dining room has only assigned times and seats for dinner. Lunch and breakfast are open seating. They do have casual dining in the buffet area nightly however it should be stressed that this is not a buffet but a meal served by waiters. It requires reservations and costs $2.00 per person. Celebrity also has sushi, pizza and pasta bar and room service. You may get the regular dining room meals served in your room during dining room hours. There is no buffet for dinner on any of the Celebrity ships.

I might also point out that Celebrity dining is more formal than other lines and the suggested dress code is for the evening and not just dinner. This is not evenly enforced but there have been people turned away from various venues due to improper dress.
