Vegetarian burgers

Gardenburger - not Vegan

Boca - Vegan

Morningstar Farms - not Vegan

 

Morningstar Farms definitely makes a vegan burger. I don't believe their basic burgers ("Grillers") are vegan, but they have a variety of products. Gardenburger also has a variety, but I don't know if any of them are vegan...

I don't know the answer to the "chicken broth in everything" question either but I'd love to know. The chef of the cafeteria where I work INSISTS on putting chicken broth in absolutely everything. Once every two weeks they serve vegetarian vegetable soup as the daily soup, the other 13 soups are all non-vegetarian even though half of them could EASILY be made so.

 

Haven't these people heard of vegetable stock?

I will never understand why one needs chicken stock in a cream based soup(ex Panera's cream of broccoli..) Really?? Why??

 

Yes - and by the same token, I don't understand why one needs to put cream into a risotto!! A properly made risotto shoudl come out very creamy without the addition of any cream!

Okay - I can tell you why chicken is usually the stock of choice in a cream soup (and they are not cream based, but cream finished soups).

 

Vegetable stock can definitely be used in place of chicken stock when making a cream (finished) soup like Cream of Brocolli or Cream of Potato but for a large commercial kitchen it's a lot easier - and really a lot cheaper - to make large batches of chicken stock. And, if they don't make their own stock, pre-made good qualitychicken stock or chicken base is a readily available commodity - unlike vegetable stock.

 

I know it's not what you want to hear - and I can commiserate - as a vegetarian who's also allergic to dairy.
