strange ?...do they serve the sit-down dinner the 1st night?

Usually you receive a card in your stateroom informing you of your seating and table number. So yes, the sit-down dinner is served the first night. It is always a casual night, as some passengers may not have gotten their luggage delivered to their stateroom yet.

Occasionally, ships will have open seating in the dining rooms instead of fixed traditional seating on embarkation day. This is especially true if the ship is scheduled to leave port late in the evening--like a lot of cruises from San Juan do.
