What does it cost for a day pass on the breakaway? And when can you reserve one

I know on the breakaway its $179 per person for the week if you order it in advance, and $199 per person for the week if you wait to order it when you get on the ship. Supply is limited, so if you want it, book earlier than later.

If its available by the day, Im not sure of the cost.

If you mean for just one day, only on a port day, if there are any left, you would have to check that day, $40?

Day passes are normally not available on sea days. If they are not sold out, they may sell passes on port days.
