I believe the earliest time the web site is going to allow you to select is 10:30am.

I got 10:00am for the 2/9/17 4 day cruise on the Triumph.

To book boarding appointments does your cruise have to be paid in full? Sailing new years eve 2018 and still no option to pick time?

No, you do not have to be paid in full to select your check in time. The site will not allow you to choose your check in time until 90 days prior to your cruise. If you log into the Carnival site, on the left in the blue box, where it says "Check In" it will give you the date that you are allowed to choose the time.

Only if you are Diamond, Platinum, or have FTTF.

There is no guaranteed boarding time though having an early check in will get you on earlier. :)
