There has been much interest in so-called comfort foods in recent threads. For the significant number of posters who mentioned their love of meatloaf, I offer this simple recipe. We have used it many times.

 

MEXICAN MEATLOAF

 

2 Pounds lean ground beef

1 Cup Picante Sauce (2/3 cup in the loaf, 1/3 cup over the top of loaf).

1 Cup bread crumbs

2 Eggs slightly beaten

 

Combine above ingredients, saving 1/3 cup of picante sauce for top of meatloaf. Form into a loaf and place in greased pan. Top with remaining sauce. Bake at 350 degrees for 1 and 1/2 hours.

 

Its the picante sauce that makes this meatloaf special. For those that like a little zest, hot picante sauce can be used. We prefer the mild sauce.

Try this recipe out and you'll never make it another way again.

 

1 lb ground sirloin

1/2 red bell pepper

1/2 green bell pepper

1/2 large yellow onion

2 carrots

2 cloves garlic

1 egg

1 cup bread crumbs

1 tsp salt

1 tsp onion powder

1 tsp dried basil

1/8 tsp cayenne pepper

1 tsp course ground pepper

1/4 tsp thyme

 

Glaze:

 

1/2 cup honey

1/2 cup ketchup

dash worch. sauce

dash cayenne pepper

 

Preheat oven to 350.

 

Mix together glaze ingredients and set aside.

 

Put the bread crumbs, salt, onion powder, basil, thyme, cayenne and ground pepper into food processor. Pulse until mixed well. Empty into a bowl. Next, put the bell peppers, onion, carrot and garlic into food processor, mix until finely ground. Place in a bowl with ground sirloin, mix until thoroughly combined, add egg, mix again, then and bread crumb mixture. Add additional bread crumbs if mixture is too moist.

 

Put entire mixture into loaf pan, but do NOT bake it in the loaf pan. The loaf pan is merely to shape the meatloaf. After meatloaf has been shaped in loaf pan, empty it onto a foil lined baking sheet. Place in oven for 10 minutes. After 10 minutes is up, brush loaf with glaze mixture. Return to oven for an additional 40 minutes. Brush loaf with remaining glaze mixture. Go ahead and use all the glaze. Return to oven for an additional 20 minutes.

 

You guys will LOVE this meatloaf.

For even easier freezing or storing, we make the meatloaf using muffin tins instead of loaf pans. It's great for those who may live alone or for a family of 2 or 3. You can thaw the servings you need and keep the rest in the freezer.

Meatloaf has to have onion in it to win my approval! I will try meatloaf when eating out-there is a great variety outthere. Does HAL's meatloaf have onion in it? If so, I will look forward to trying it!
