Princess put us on a flight that arrives in FLL at 9 am

Will we be able to drop our luggage when we arrive in port, I'd say close to 10 am

 

Also, are we able to check in that early and SIT until they permit us on the ship?

You can drop off checked luggage starting about 10am.

 

Checking starts at 11 or 11:30 usually. Boarding slightly later.

I think you're right.

I think in the past I checked luggage and got a number and sat in a waiting area for 11 am

That has been our experience from a 0915 flight. By the time you get your luggage and taxi over to the port you will be able to check in (or in short order) and have a seat to await boarding.
