CaroleSS Posted February 16, 2014 #3 Share Posted February 16, 2014 Cucumber Canapés ingredients: For the Whipped Feta: 6 ounces good feta, crumbled 2 ounces cream cheese, at room temperature 2 tablespoons freshly squeezed lemon juice 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/3 cup olive oil 2 large cucumbers, sliced Sun-dried tomatoes, drained and chopped 1/2 cup fresh basil, chopped directions: 1. First, make the whipped feta. Place the feta and cream cheese in the bowl of a food processor fitted with the steel blade. Pulse until the cheeses are mixed. Add the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and turn on the food processor. With the food processor running, slowly add the olive oil in a steady stream through the tube. Turn off the food processor. 2. Place a dollop of whipped feta in the center of each cucumber slice. Top with sun-dried tomatoes and fresh basil. Serve. Granny Smith apple, peeled, cored & coarsely grated 1 c. coarsely grated extra sharp cheddar cheese 3 tbsp. mayonnaise 1 tbsp. honey 1 tsp. Dijon mustard 1/4 tsp. caraway seeds Freshly ground pepper to taste Cut out 3 or 4 rounds from each slice of bread using a 2" round cutter. On a baking sheet toast the rounds under a preheated broiler, turning once until golden. In a bowl, combine the apple, cheddar cheese, mayonnaise, honey, mustard, caraway seeds and pepper. Cracker, guacamole Cracker, spinach dip Lunch meat cut into squares, bread cut into squares, cheese slices cut into squares and mix up the combinations Easy, just buy some crackers, different dips, cheese, luch meat, and bread and mix it it up into combinations.
