Here is the same info with more explanation:

 

AL West: Mojo, Saffron (Formal), Pimiento, Basil, Jasmine (Formal), Shiitake, Pomodoro

 

AL East: Mojo, Saffron (Formal), Pimiento, Shiitake, Basil, Jasmine (Formal), Pomodoro

 

AL West means Allure Western itinerary. Mojo is the menu for day 1. Saffron is the menu for day 2, which is formal. Pimento is the menu for day 3 ... Jasmine is the menu for day 5, which is formal. Etc.

Night 2 is ALWAYS the 1st formal night....the 2nd will be either night 5 or 6....depending on the route!

Because the menus are usually the follow up question to the formal night question.
