I just looked for rates for the Carnival Vista for Jan 14 2017, and the Early Saver rates are not there? I have seen this happen before. They just ended their reduced deposit sale. Maybe they are hoping to get people to book at the available rates now and then hope they don't check to see if the rates go down. To answer OP's original question - ES for shorter cruises (5-day or less) ends 3 months before sail date. ES for longer cruises (6-day or more) ends 5 months before sail date.
