You may find that Formal is more relaxed than you have seen in the past, although In my experience there is still a large number of people that dress up. On Quantum class they have a restaurant, Grande, that is always formal. No ship-wide formal nights. The other nights in the MDR are casual, and specialty restaurants are always smart casual. Formal nights still exist on most ships (Not on Empress, Quantum, Ovation, Anthem) but they are not like formal from years past and what you will see will be very mixed and varied.
