Canada's Thanksgiving

Easter Monday? OP is inquiring about Thanksgiving... which for Saint John means only businesses exempt from the Days of Rest Act are allowed to open, so restaurants and 'mom & pop' retailers of pharmacy/snacks/magazines/tobacco type stuff can stay open but almost all medium and large retailers will be closed.

 

There's a detailed list of exactly what can operate on the written Act itself, available on the page I linked, but most relevantly for cruisers you will be allowed to go on tours ('...educational, artistic, or cultural...' activities being allowed), buy food & drink, get medication if needed, and shop for souvenirs in at least the smaller stores.

 

It's possible Saint John has passed municipal bylaws allowing more flexibility - I know Toronto has designated 'tourist areas' where businesses can open on Stat Hols - so there may be more things open, but if you assume the worst you can only be pleasantly surprised.
