Ship docks at 8 am, will there be enough time to catch a 11 am flight by taking ship's first shuttle bus of the day?

I wouldn't chance it and wait - take a Uber/taxi.

We have used ship transfers at Barcelona and Rome. An advantage was that it gave us priority disembarkation.

You might be off early but very unlikely a cruisline transfer bus will leave earlier than a Uber/taxi. Also, you won't be off any earlier than self service disembarkation.

Ship will not allow you to book their transfer for 11 AM flight. You need to make your own arrangements.
