Assuming the ship is returning to those ports, the staff can and does get time off. And if one individual isn't getting off that day, s/he can swap the money with someone who is getting off.

Try leaving them a towel animal. You'll probably get a big smile from them.

We start a "challenge" with ours on who can have the most fun with towel animals. After they leave the first towel, we decorate it (glasses, mustach, etc.). Next night, they try to outdo us and on and on. It's fun for us but also I think gives them a little something different. It also helps build a more relaxed relationship.

I always give cash at the beginning and the end. Mainly, I bring a ton of candy so that I can make it through the trip and I always bring enough for myself and the room steward. This usually includes anything from M & Ms to Fruit Roll ups. Yes, all of the candy is individually wrapped, and even if they don't want it they can throw it out. I know I would appreciate it.
