Carrying bevarages on board??

Yes, but limited to 12 cans/pp carry on. Officially plastic bottles are not permitted, but water on board is in plastic bottles. Go figure. You can find all the terms in the passage contract. Follow Thrak's advice. Pre-purchase water. If you have the plus or premier fare then you can get all the water you want. Water is included.

That's so they won't have to waste time checking all of the bottles of water to see if they're filled with booze.

Correct. 

On our last trip in Florida we entered with multiple 1 liter plastic bottles in a suitcase & were never questioned. I suppose they could have rejected them.
