NCL Specialty Dining Reservations for Solo Cruiser

I’ve started to make my reservations for specialty dining on the December 22nd cruise from Tampa. However every restaurant I pick makes me to a reservation for 2 people and charges me for two people. How do I make a reservation for 1 person

Make Reservation for 2 people!  They understand when you check-in!

Booking "Set-Fee" restaurants first (whatever day you choose) and then Ala Carte after that (because they don't pre-charge for Alal-Carte).

I travel solo all the time.  I make my reservations on board ship.  Many times if you go when the restaurant opens, you can be seated without a reservation.  You can always make a reservation each need when you decide where you are going to eat.

I just came off a solo cruise.  I pe-booked 4 restaurants for 2 people.  I did not pick any restaurant that required me to pay money.   I had a 2-meal dining package plus 2 Platinum meal coupons. 
 

Upon arrival on the ship, I went to the reservation desk to change them all to one person.  The worker tried to do that but apparently didn’t know how.  She then said “let’s just leave them, it’s not a problem.”   Later that evening I reviewed them on my cabin TV and she had deleted my first reservation entirely while trying to change it.  I ended up having to rebook it and my original day/time was no longer available.  
 

Anyway, my other reservations were all for 2 people and I just told them the correct number when I checked in for the meal.  Never an issue.  You’re going to get a 2-top table anyway.

The smallest table in any of the venues is for 2 people.  Even if you book for one person you will be assigned a 2-person table.

 

This goes for ANYONE booking for an odd number at most venues on the ship (Teppanyaki excluded, I believe) - book for one higher than you have as that's the size table they need to give you.
