Platinum dining perks vs. free at sea dining?

It's been at least 4 years since cruising on NCL for us.  Since we're platinum, we get 2 vouchers for dinner, plus we have 2 specialty dinners each with free at sea.  Can someone please remind me how they differ in what we can order with each of them (app, soup, salad, entre, dessert.  I know I've read it on these boards, but was unable to find it while searching the site.  Also, I believe since we're cruising on 8/18, that reservation ability opens up tomorrow for us.  We are also cruising with 4 of our friends.  When I make the reservations tomorrow, can I make a reservation for 6 of us?  If so, do I need to put down who the reservation is for (name/res. #) or just make it for 6?  I'm really out of the loop on this.

Recently on the Bliss:

Free at Sea meals receive 1 App, 1 soup OR 1 Salad, 1 Entre w/ 2 sides (might have upcharge), and dessert.

Platinum meals receive 1 App or 1 Soup, or 1 Salad, 1 Entre w/sides, and 1 dessert.

I just did a google search to how far in advance of sailing date reservations for dining opens up.  I read 90 days.  I thought I had read on these boards that it was earlier than that.  BTW, besides being platinum, we are all in a club balcony on the Pearl.  So, when will dining open up for reservations?

Platinum and above get to book dining at 125 days before the cruise (which I think the Club Balcony allows for non-Platinum cruisers as well).  Haven can book at 130 days.  Everyone else is 120 days.
