Booking on Line for Speciality Restaurants

Looking at the online Menu you get a list of typical times as shown below., (8-00pm has been booked out in this case )I notice that 7:00 and 7:30 are never shown. Is that because it gives space for those who have packages or book when they come onboard. Alternatively is it because with meal times of around two hours you effectively have a first and second sitting.
 
Is it a good idea to book a time while their is space with a view to altering it later., especially when the ship is full. We are both Elite plus so if we book in advance I expect there will be a long conversation to get the discount.

On our upcoming trip, 7 and 8 pm do show up as being available on most evenings.  Those are usually the first reservations to fill up.I suspect they have a quota for number of  early reservations for each time.

 

If you are interested in dining at a particular day and time, book early.  On our recent cruise, we booked months before.  Once on board, there was very limited availability and there was a cancellation list.
