We did this itinerary on Carnival Jubilee in May. Here is how the ship tied up: Roatan - Backed in with the pier on the port side. Costa Maya - The pier was on the starboard side. Cozumel - The pier on the port side. Your experience may be different. Another consideration, if you have a balcony stateroom, is whether you prefer morning sun/afternoon shade or morning shade/afternoon sun on your balcony for the three sea days.
