I see deals for last minute cruises all the time. Before I give a website my name, etc., I have this question: How likely is it that DH and I would be able to book a suite on these last minutes cruises?

The high end and low end cabins tend to sell out first, so I'd say you're less likely to find last minute suite deals, but it's possible. People sometimes cancel.

I agree with the above poster. You will probably be able to get balcony level cabins fairly easily in last minute deals but suites are almost always the first cabins that get booked with most cruise lines.
