By now the airport Schiphol in Amsterdam has less problems. However nobody can tell how it will be next summer. Be aware most US airlines want you to check in 3 hours prior (business class about 2 hours). Travel time by cab from the port to airport depending traffic 20-30 minutes. -

Apart from Banks Mansion, also check Doubletree near Centraal Station, or hotels like Barbizon Palace, also close to Centraal Station or The W Hotel near the royal Palace. -
Try to find a cruise with stops in Flam and/or Geiranger. Both ports are situated at the end of a fjord, so sailing in and out is great.

Double check the prices, like extras. You very likely have to pay for luggage and also if you want seat reservation. At easyjet better print you boardingpasses at home too.

Be aware the vans/cabs at the terminal can only bring you to town, they are not allowed to bring you back from town. On the return you need a local cab or bus Most of the drivers will accept US$ but check that as well as the price before entering. Also many restaurants will accept US$ but at a low exchange rate.

According "noticias PV" this 3 meter long male crocodile was as captured yesterday and transported to a safe area. It might be the one the Marriott was warning about.

Even if you donot see a crocodile it can be there is one or more around. It is nature, you never can be sure about that. I know there are one or 2 crocs living in the Marina, but most of the times nobody sees them. Not too far from the airport there is a place where some large crocodiles are living in the wild, and yes sometimes they swim into the ocean. . Be glad the hotel took precautions. In case one of your party would have been attacked by a croc you would have blamed the hotel.

The best forum to post this is on the western Europe board section. However I can recommand Sama Sebo (close to the museums), Indrapoera on Rembrandtsplein, Kantjil en de Tijger, at Spuistraat, Sampurna at Singel. Just a few in city centre.

Try the Marriott or Westin in the Marina. I donot know the price at the moment, but a certain amount of it is for food and drinks.

Very likely your US prescription is not valid in Mexico. Most pharmacies are nowadays strict about that. Sometimes you will see a pharmacy with a special entrance/door for a doctor connected with that pharmacy, which might work to get your medicines. However I donot know any near the cruise terminal. Some medicines donot require a prescription and are sold over the counter.

Walmart across the street from the cruise terminal has a pharmacy department. On the street Prisciliano Sanchez -on the right of Walmart/Sams - walking distance is Pharmacia Guadalajara. Just past the Shell gasstation at the same side as the cruise terminal you will find Chedraui supermarket that also has a pharmacia department. It will depend on which pier your ship will dock which one will be the closest.

Yes it is a well known company too. It seems to leave also from the Marina, better take a cab to get there. Take the correct address from where the ship leaves as the marina is a large area. -

In Puerto Vallarta check with https://oceanfriendly.com/whale-watching-tours/ and/or https://vallartanatours.com/ Be aware they donot leave from the cruise terminal. Ocean friendly leaves from Los Peines Pier, about a 15/20 minutes walk from the cruise terminal (depending on which pier your ship will be docked) Vallarta Natours leaves from the Marina, better take a cab to get there, about a 10 minute drive. Also check the times your ship arrives in Vallarta. -

Just keep your valuables on the ship, donot take more money then you might need (cash is king in general). Of course donot drink too much alcohol. Do or do not what you would do in your home town. If taking a cab, make your price before entering.
