Did you notify Princess in advance of the cruise that you want vegan meals?
You specify dietary request in the Princess Medallion App.
In the Medallion App go to:
My Preferences
then
Dining
2nd page of Dining will be Diet page
Select there Vegan
and then at the next page Save.
Actually you can get the date extended but you have to apply for the extension.
https://book.princess.com/captaincircle/customerCare.page at the bottom of the page is a drop down menu "What can we help you with?". In the menu select "Future Cruise Deposits" and then go on from there.

Until he recently retired @chengkp75 was chief engineer on ships including cruise ships. I suspect that he is much more qualified in the field than you think you are.

I have been on the Grand Princess multiple times. The only times I have seen water dripping is in humid environments were some fool has left the balcony door open and the room door open. Water condenses out of humid air when it hits cold pipes in the ceiling space. So be nice and do not leave the balcony door open for extended periods.

An amusing aside is that some years back when the clerk at the cruise terminal scanned my passport it crashed the computer system. Fortunately they had a programmer on hand who did an on the fly change to their code.
The only items I have ever spent non-refundable OBC on have been some watches. You have to know something about watches though.
