  1. I plan to turn the squeaky wheel on Monday and get something set with the surgeon. I will let them know that we are beyond the wait and see period. I'm sure your teenager will learn very well how to combine proteins under your tutelage. IT is good that he is enthusiastic about preparing foods. Maybe he can be the substitute chef in the family. Thinking of you often and sending hugs. Thanks for the feedback on the arctic char. It is always a big lift to get reports back like yours!
  2. Good morning, everyone! @Cruzin Terri I hope you have a safe trip home. @rafinmd The same to you! I have a Zoom meeting this morning at 9 am, so I have to make this quick. I did manage to find the transformer I need for the under cabinet lighting and ordered two. Now, I just have to find a light bulb that fits properly and a new glass piece for one of the lights. Sue is continuing to improve and managed to stay up until bedtime last night. She is sleeping in this morning and that is a good sign as she has spent most of the night on the couch the past two nights due to coughing. She needed to sleep sitting up. Today's meal sounds like an easy and tasty one to make. We just finished off the turkey leftovers, so it will be a few days before we want chicken. Most of the recipes I found are very similar and only differ in a seasoning or two. https://cookingformysoul.com/dutch-oven-whole-roast-chicken/ This one from the Pioneer Woman looked good. https://www.thepioneerwoman.com/food-cooking/recipes/a41169696/dutch-oven-roast-chicken-recipe/ Wishing you all a wonderful day!
  3. Insurance is crazy! I did try the pill form of Ozempic and it is awful. There is a horrible after taste and you have to wait 30 minutes before you can drink your coffee. That was the worst part. We can try something else until the Hollywood set decides they need that for their beauty regimen. I am keeping my low dose of metformin because it is one of the few drugs that help reduce insulin resistance and I am highly insulin resistant. The combination of that and the Ozempic have been great at controlling my blood sugars. @bennybear That dog is beautiful. @StLouisCruisers Congratulations to Ren and his proud grandma! @JazzyV I sure hope the MRI pinpoints the problem and you can get some relief. @marshhawk Leave the carbs alone! The only carbs that are good for us are the ones filled with fiber. That means vegetables - not bread, rice, potatoes, etc. @Cruising-along What a bummer on your excursion. I think I am going to go ahead and book the car for Kahului and drive to Haleakala.
  4. I waited too long to call the surgeon's office as it is closed this afternoon. So, I will have to call first thing Monday morning. @57redbird I'm glad you were able to get a surgery date. I hope I get one soon. I want this taken care of in time for my Hawaii cruise. @ger_77 I sure hope Wayne is ok. What great friends you are! @marshhawk Hope the oxygen helps. At one point my doctor ordered oxygen for me at night, but it kept me up. I wasn't sleeping at all. As soon as I unplugged it and sent the oxygen concentrator back, I slept just fine. I had my brother (respiratory therapist) look at my numbers and he said I'd be fine without it and was borderline before. But, that was before I started CPAP therapy and the CPAP seems to have done the trick.
  5. Thank you both for recognizing the DNA link to diabetes. When I was diagnosed many "friends" told me I had done this to myself. The history goes way back in my family. I can trace it to a great great grandmother on mom's father's side. Her mother's sisters had it. Cousin Joannie has it. On dad's side I know his brother had it. Lorraine, after my adrenalectomy I could no longer tolerate the metformin and the dosage I was taking. At the suggestion of my endocrinologist, I cut the metformin in half and we tried to up the Ozempic, but I can't get it due to the shortage caused by those using it for weight loss. How do they get it?
  6. Rabbit, rabbit, white rabbit! Good morning, everyone! I am glad to hear that everything went well for @Sharon in AZ Sharon yesterday and that @rafinmd Roy is up and feeling chipper. Safe travels today, Roy. Sue is feeling better due to her medication and will hopefully lick this bug she has. We have to cancel Farkel tonight as DB and DSIL are both under the weather. Graham, @grapau27, I'm sorry to hear of the water issues. Hopefully the mess is cleaned up quickly. Nothing much on the agenda today. I'm heading to another hardware store chasing down the transformer we need for the under cabinet lights in the dining room. Today's meal sounds good to me! Arctic char is similar to salmon, so you can easily substitute salmon if you can't get the arctic char. The recipe is a Bon Apetit/Epicurious recipe. I will post the link for those of you who can see it. The kitchen is closed to me. I could not find the complete recipe on another site. Punchfork and Pinterest list the ingredients, but you have to figure out what to do with them. https://www.epicurious.com/recipes/food/views/ba-syn-arctic-char-with-greens-and-gribiche-dressing Here is a recipe for the gribiche dressing. https://cookswithoutborders.com/new-wave-sauce-gribiche Here is a recipe for some arctic char with greens. It isn't the exact dish of the day, but it will help you keep body and soul together. https://www.sugarlovespices.com/citrus-crusted-arctic-char-with-mixed-greens/ You can use the greens of your choice. Or make it a green salad to have along side. Here's a recipe for arctic char with a blood orange salad. Sounds pretty good to me! https://biggreenegg.com/recipes/arctic-char-with-blood-orange-salad/ I hope this finds everyone well. Wishing you all a wonderful day!
  7. Oh, my goodness. @cruising sister Lorraine, Murphy is so cute! Love those chubby cheeks. The second picture is almost as if she's saying, "Don't mess with me!" Haven't heard from the surgeon yet. I'm guessing he won't have time to look at the results until the end of the day. If I don't hear from him tomorrow morning, I'll call him. I ran the results past my friend, John the doctor (not to be confused with my friend John the mayor or my friend John the grocery store manager). I'm right on the border as far as muscle opening size is concerned, but certainly big enough for intestines to get caught and twisted. John the doctor says it needs to be fixed soon.
  8. We usually eat around six, but we're not having the lasagna. Menu is fish and vegetables - probably broccoli. Thanks! That is scary, especially since the toes have gone black. Healing thoughts going Dena's way. I'm glad you slept well last night! Hope your travels go smoothly. It is very walkable. It is a very small town so if there aren't sidewalks, the streets are safe to walk in. We walked all over town that day and found the waterfall that we walked up to. If the fish and chip truck is there, do treat yourself. It was excellent. Well, the squeaky wheel gets the grease. I posted on the hospital's FB page and they gave me the number for Patient Relations. I called them and filed a grievance over the situation. Patient Relations gave me the number of the radiology group that reads the scans and I called them. They were full of excuses because of the huge radiologist shortage. But, she assured me that my scans had not been lost and were in the queue to be read and that they would be read within 3 weeks. I told her that was tomorrow and she acted surprised. Just got a call back from her and the scans have been read and should be posted shortly.
  9. Good morning, everyone! @StLouisCruisers Thanks for the link to my pictures in Seydisfjordur. How do I copy and post them here? Just a simple copy and paste? I think Sue is feeling better so we are going to the hardware store to pick up what we need to get the lights under the built in cabinets to work and then to our favorite clothing store. She wants to buy a winter coat. That will come in handy here in Michigan. The white chicken lasagna sounds good, but I would need more seasoning than it calls for. It looks good and would be nice for a change. Just hope it isn't too bland. https://www.aheadofthyme.com/creamy-white-chicken-and-spinach-lasagna/ This one is very similar to the first one, just not as many layers. https://natashaskitchen.com/chicken-lasagna-recipe/ This one has a list of vegetables that can be used in the dish. @Crazy For Cats I'm sure you can find a substitute for the spinach. I'd use the mushrooms, for sure! @kazu Jacqui, broccoli is one of the vegetables, so your dish would fit right in! https://www.lecremedelacrumb.com/easy-white-chicken-lasagna-with-spinach/ I hope this finds you all well. @rafinmd Roy, please go slow today! Safe travels. Wishing you all a wonderful day!
  10. I can, too, but they aren't posted until the images have been read. So far, no posting. It isn't that the surgeon is holding out on me. The problem is that the deadbeat radiologists haven't read the films yet and posted the results. I tried to find contact information for them with no luck. I tried to find contact information for the hospital administration with no luck. These people insulate themselves quite well. Super news! Oh, @JazzyV Vanessa, that sounds like a royal pain. At least someone came out today.
  11. Good afternoon, everyone. The electrical outlets are all working properly. It was all caused by a problem with the outside outlet and that is fixed so the other two inside are fixed. We also know why the lights under the cabinets in the dining room don't work. That is also an easy fix. I just need to get to the hardware store. Sue picked up her prescription for antibiotics and we are going to settle in for an afternoon of Netflix. Still no results from my November 10th CT scan. @JazzyV I hope your radiator problems can be fixed as easily as our electrical ones were. @rafinmd I'm glad you have a diagnosis and are being discharged. Safe travels home, but don't rush things. @Nickelpenny I'm enjoying your travelogue of Hawaii as this is the cruise that we'll be doing in February. @kazu Thank you for the Roy updates! I hope your appointment goes well today. @Quartzsite Cruiser Lenda, I am so sorry the appliance gremlin attacked your washing machine. Between the washer, the HVAC, and the need for a new motor home, you'll be ready to sit on the corner with a tin cup.
  12. Good morning, everyone. It is a chilly 25F here in mid-Michigan with a forecast of 37F for a high today. The electricians are coming at 10:30 am to fix the outlets that won't work. I know they were working for the previous owners as I have pictures of their fan plugged in and working. They were supposed to have all electrical issues taken care of according to the terms of the sale, but obviously they didn't. There are two outlets in the dining room that don't work and one outside the dining room sliding doors. Interesting that they are all in the same area of the house. Sue does have a virtual visit with the NP this morning. She was feeling better yesterday, but woke up today and her face was on fire. It is all sinus. I can relate because I had that happen to me on the Zaandam this summer. Fortunately, mine cleared up very quickly. We did have this meal of the day back in February so today we will be reviewing. The meal sounds good to me, but has quite a bit of sugar in it, so I would probably decline. https://houseofnasheats.com/slow-cooker-korean-beef-short-ribs-kalbi/ This one has less sugar in it, so might be a possibility minus the carrots. I chose this one for Lenda @Quartzsite Cruiser and Carolyn @Cruising-along since they are carrot fans. https://mykoreankitchen.com/slow-cooker-short-ribs/ This next one is a definite possibility due to the lower sugar content. https://mykoreankitchen.com/slow-cooker-short-ribs/ It also uses a product called coconut aminios. Here is a description of that. https://www.eatingwell.com/article/289738/what-are-coconut-aminos/ This product would be good for those watching sodium. Personally, this next one looks the best to me. https://damndelicious.net/2016/03/23/slow-cooker-asian-short-ribs/ I hope this finds all of you well or recovering. Wishing you a wonderful day.
  13. I was thinking about you when I wrote that. I think that was worse because you were out of the country as well as away from home.
  14. This is good news, thank you for posting it. It has to be hard to be hospitalized so far from home.
  15. That is good news. Hang in there, Roy. @summer slope Maybe you and I will be watching Sue and Sharon @Sharon in AZ
  16. Good morning, everyone. @rafinmd Thank you for the updates and I hope you are more comfortable. Keeping you close in mind today. @Sharon in AZ Sharon, I think you, Dixie @summer slope, Sue and I should all try the hula. That is my 25 year old mind talking, not my 70 year old body. It is worth a try, though! It is another cold day here in mid-Michigan but the sun is shining brightly so I don't think it will seem as cold. It is currently 21F with a high of 30F. Sue has been coughing and hacking for the past week and is feeling pretty miserable. She has tested several times for Covid and come up negative. What ever it is, she hasn't given it to me yet. She is debating about calling the doctor because this is lingering on so long. She had it the whole time she was up north deer hunting. So, that is almost two weeks now. Not much on the agenda today. I hope to start up on my quilt again today. Still no results from the CT scan on November 10th. 18 days. Today's meal sounds really tasty but I would have to find a substitute for the rice. Or maybe mix half rice, half riced cauliflower. It sure does look tasty! https://www.lecremedelacrumb.com/one-pan-spanish-chicken-rice/ This recipe uses a shredded or chopped chicken and has olives in it. I do like the olives and that would interest me. https://www.aheadofthyme.com/2017/02/one-pot-spanish-chicken-and-rice/ This last recipe is quite different from the first two and sounds really good to me! https://www.themediterraneandish.com/spanish-chicken-rice-recipe-chorizo/ I hope this finds you all well or on the road to recovery. Wishing you all a wonderful day!
  17. I think you can get email addresses from Christopher Elliott's site. https://www.elliott.org/company-contacts/holland-america/ There are a bunch of people we can email. Do it daily. They like to hear from their valued esteemed guests.
  18. Use the Feedback tab on the left hand side of their homepage to let them know how awful the site is. The last time I talked to anyone about it I got the usual clear your cookies bit. We shouldn't have to be clearing cookies or using incognito mode or different browsers. This is a business and they need to have a functional website. The more they hear that from, the more likely they are to fix things. If you like sending email, start writing Gus Antorcha.
  19. Good morning, everyone! It is a cold start to the day here in mid-Michigan and the prospects for warmer weather are bleak. High today is 30F. This will be a good day to enjoy the turkey soup made from the leftover turkey carcass. Turkey soup is a tradition handed down from my grandfather. My dad continued the tradition and I am now doing so. We really enjoyed it last night. Thank you, Jacqui @kazu for posting the update from Roy. I'm thankful for the attention he is getting, but the poor man must be exhausted. Yesterday I was concerned that we hadn't had any butternut squash lately and almost included a recipe for roasted chicken and butternut squash. Thankfully butternut squash has returned. This would be a great meal on a cold day like today in mid-Michigan. https://cookieandkate.com/roasted-butternut-squash-soup/ When I saw today's meal I thought for sure we must have had it before, but I couldn't find any soup in my files. How did we miss this before? https://downshiftology.com/recipes/roasted-butternut-squash-soup/ The garlic caught my attention in this recipe. Garlic is so good for you! And if we all ate it, the odor wouldn't be a problem. https://alexandracooks.com/2023/10/15/roasted-butternut-squash-and-garlic-soup/ Wishing you all a wonderful day!
  20. I agree with the others that you need to be a squeaky wheel. They do have stuff for situations like yours. Hope you can get comfortable.
  21. I am thankful you listened and got it checked out, but dismayed at the diagnosis. Keeping you close in the next few days and wishing you a rapid recovery.
  22. Good morning, everyone! We all slept in here. It is a cold and threatening day here in mid-Michigan. There is a forecast for snow today. Only an inch here in Midland, but Sue has to take River home and they are supposed to get more. We made the mistake of letting River have dump cake with ice cream last night and the sugar had her bouncing off the walls until quite late. Next visit no dessert in the evening. @smitty34877 I'm glad you are safely home and that you had a relaxing week with your family. On to giving cooking lessons. I think of Tana daily. I hope she can be kept comfortable. @StLouisCruisers I hope the tummy issues continue to improve. What a pain right around the holidays. @rafinmd Please do get checked out and have them take a look at that foot as well. @Quartzsite Cruiser It sounds like you are settling in quite nicely in Quartzsite, but horrors to the depleted stock of wine and spirits. @marshhawk Annie, I hope you continue to improve as well. @kazu I love the hedgehog! @JazzyV I hope you got some sleep last night. I woke up at 4 with hip pain and again at 5. When I got up this morning both hips hurt until I was able to walk it out. Today's meal sounds good to me. I'd throw some brussels sprouts on the sheet pan and have a great dinner! We had something similar a while back but it was chicken and potatoes in a skillet. I like the garlic in this dish. https://www.aheadofthyme.com/one-pan-garlic-roasted-chicken-and-baby-potatoes/ The green beans on this one look pretty good as well. I'd eat them! https://cafedelites.com/sheet-pan-garlic-herb-butter-chicken/ This last one has a mediterranean flair to it with the olives and feta cheese. https://www.halfbakedharvest.com/garlic-butter-chicken-and-potatoes/ I hope this finds everyone well or improving. Wishing you all a wonderful day!
