  3. Rabbit, rabbit, white rabbit. Good morning, everyone! We are looking at partly sunny skies and mid 40s today. So a pretty day, but on the chilly side. Could be worse! I have an early water fitness class today and a Zoom meeting this afternoon. Otherwise, a free day. Today's meal is what I have for lunch sometimes. I don't bother with the presentation, just get the ingredients out of the fridge and dig in. I'm not sure there is a "good" recipe for this.   4. This one was a learning experience. I learned that I put to thick a layer of duxelles down and it made it hard to handle the meat. While the presentation wasn't as pretty as I would have liked, the flavors were out of this world.

  6. Good morning, everyone! Happy Easter to all who celebrate. Not much on our agenda today. I am looking forward to a day of rest. We took DB Jeff out to eat last night for his birthday. That was pleasant. DB Bill and DSIL Lauren have gone to their daughter's for the weekend. Jeff will not be pulled away from the basketball tournament. I was surprised he went to dinner yesterday! Today's meal sounds like a good entry to the Easter Brunch. Dad used to make special breakfasts for us on Easter in an attempt to lure us away from all the candy. He was semi successful. My favorite was chicken livers marsala over toast. The spinach and egg bake is nutritious as the eggs provide protein and the spinach is just full of good nutrients. The dish is also low carb and great for those watching their blood sugar.   7. Good morning, everyone! Somehow the Easter Bunny made an early visit to our house. There was a nice basket on the table this morning for River. River will be going home today and I'll bet the Easter bunny will leave her something there tomorrow as well. @Suslor and @cruzn single @USN59-79 Today's meal is a quick and easy one. It is also low carb and great for those of with diabetes. This first recipe uses chicken thighs, but use what ever part of the chicken you prefer. I like that there is no sweetener in the sauce.   8. Jump in as often as you like! Glad to have you as a part of the community. I think the ones on deck 6 that you are talking about are considered large insides. They can stick you anywhere they want. The one time I did a guarantee it was for an ocean view cabin. I ended up in an aft verandah. Sometimes it works out!

  12. Good morning, everyone! It is going to be another beautiful day here in mid-Michigan. Lots of sunshine and highs in the low 50s. Not much on the agenda today. I am going to the pool for water fitness this morning. We are excited that we booked the transatlantic along with @kazu Jacqui, @ger_77 Gerry and Maurice, @marshhawk Annie and Chuck, @0106 Tina and Jonathon, and hopefully @Sharon in AZ Sharon. I hope I didn't forget anyone! Last night decimated my NCAA brackets. I guess there is next year. I'm going back to choosing my winning teams by the color of their uniforms. It seems to work better. Today's meal is an easy one and one that appeals to me. You just take the fixings for an Italian sub minus the bread, add them to broccoli and toss with some red wine vinegar dressing! https://www.skinnytaste.com/italian-sub-broccoli-salad/ This salad is similar. It has broccoli and cauliflower and the other veggies of an Italian sub minus the meats.   14. Good morning, everyone! We are supposed to have abundant sunshine here in mid-Michigan and temps in the mid 40s. I have PT this morning and a hair appointment this afternoon. I am getting a bit shaggy. @summer slope I'm sorry you are so sore today. I'd probably be lathering myself with Aspercreme. The meal today would be a nice side dish to what ever main you are preparing and especially for the summer months. Hold on to your hats, but this is a dish I would eat because the carrots aren't cooked. I do like them raw.   16. Interesting to see how long tax returns are taking. I filed my taxes about 3 weeks ago. I received my federal tax refund a little over a week ago. The next day I received my Ohio refund and on Monday I received my Michigan refund.

I've never had Hollandaise Sauce as a meal, but it is great on your eggs benedict, asparagus, broccoli, or fish and chicken. The Greek yogurt version is an attempt to cut calories and fat. I'd give it a try, but will probably prefer the real thing.   18. Where's my angry button? My nephew and niece in law got hit with a huge bill like that when their daughter was airlifted from Traverse City to Ann Arbor due to burn injuries. Rarely are air services like that in "network". Insurance paid a pittance and the company balance billed for the rest. @Quartzsite Cruiser I rarely have a glass of wine at home. That is a cruise activity for me. I think because I have to get up early every morning. If I have wine with dinner, I am fine. If I just have wine at night, I feel it the whole next day, even if it is only one glass. @Sharon in AZ I like Aveeno as well. We had another melt down here tonight. It was caused by having to go to bed.
  19. You'd be really surprised, Jacqui. Insurance companies here play doctor all the time. They decide if you can have an MRI or a CT. They decide how many PT appointments you can have. They decide if you can have the knee replacement surgery. All without ever laying eyes on you, let alone examining you or your films. The Cleveland Clinic has a whole department dedicated to appealing insurance company denials for service. Oh, my goodness! You never hear of that anymore and it is no surprise that you didn't think of it. @LAFFNVEGAS Happy Anniversary! @Quartzsite Cruiser So you got loaded again today? Is this a regular habit? @ger_77 Beautiful blankets. I'm sure the kids who receive them really like them. @Vict0riann I sure hope you can go on your cruise! @kazu Your pictures of Maverick reminded me of my sister's Moose except he was pure black. He was the same size and thought he was a lap dog. He loved kids and would immediately get down so they could come over and pet him. Once he ran away from home. My sister found him a block over playing with some kids. She had to drag him out as he wouldn't come when she called. He was enjoying the kids too much. Today was a good day. We went to the butterfly exhibit and held butterflies. Then we went to the canopy walk and enjoyed walking among the tree tops.
