We are going on Gem in August.

What terminal does she use in Port Canaveral?

Is there a shuttle that just runs around Port Canaveral to Jetty Beach or the Cove area?

Port Canaveral is a port call for the Gem's Florida & Bahamas cruise out of NY. The OP is asking where the ship docks in PC for the day. (OP: sorry, I don't know. But I suspect a call to NCL might give you the answer. I also want to recommend the Kennedy Space Center for an amazing day.)

I don’t think there is a jetty Park shuttle, there are taxis

No shuttle to Jetty Park, but there will be numerous taxi/van services available to you as you disembark. Port Canaveral Transportation (888 Taxi) was very reasonable and the driver gave us her card for a return pickup. FYI, there is a convenience store by the beach entrance at Jetty Park, but there hours are not always conducive to cruise ship arrivals so you might want to ask your driver to stop at local 7-11 or Circle K to stock up on water, chips, etc before you enter the park.
